This is a perfect recipe to use up leftover baked potatoes or mashed potatoes. I usually keep them in a bag in the freezer until I have enough and then make this.
2 quarts milk (whole milk tastes better, but I usually use skim since it’s lower in fat and what I have in the house)
1/2 cup butter
1/2 onion, diced
5 or 6 baked potatoes (or equivalent mashed potatoes)
2/3 cup flour
1/2 cup cooked crumbled bacon
1 1/2 cups sour cream
2 garlic cloves, minced
salt & fresh ground pepper

Directions
- Place butter and onions in a large pot. Cook till onions are translucent.
- Reserve 2 cups of milk and pour the rest in the pot with the onions.
- Warm milk and while it is heating mix remaining milk with the flour, whisking till smooth.
- Whisk the milk/flour mixture into the heated milk, continuing to whisk till well blended and smooth.
- When milk has thickened add the potatoes, bacon, salt, pepper, and garlic.
- Finally mix in the sour cream just till melted. Serve immediately.
Sometimes I add the garnishes and just put the pot on the table. Sometimes I put them all in little bowls and let each person doctor their own bowl up. Beloved likes to to add hot sauce to his as well, of course.
